Roast Leg of Lamb with Cranberry and Redcurrant Jus
A hearty Sunday roast and Easter feast that the whole family will love. The vegetables in the recipe can be replaced with others if you wish such as potatoes, parsnips, carrots, courgettes or aubergines. The timings giving are for cooked lamb that is still a little pink so if you prefer your meat pinker or well done, adjust the times accordingly.
